Serrano Ruccola Bluecheese Salad -- Heavenly Delicious

    It’s the middle of March and we can feel the spring coming, it’s the smell, the fresh crisp air and finally longer days. This salad is the perfect Spring salad, very easy and quick to make. It goes great as a side, but filling enough to be its own meal. I personally are in love with this salad, I basically had it every other day for a week now. Here it is:


    Serves 2
    4 Cups Ruccola Salad
    1/2 Cup Grape Tomatoes, cut in halves
    1/4 Cup Chopped Walnuts
    ½ Cup Bluecheese, buy either crumbled or chop it yourself
    3-4 Scallions, chopped
    3-4 Slices Serrano Ham

    For the Dressing:
    2 Tbls Virgin Olive Oil
    1-2 Tbls Balsamic
    Salt & Pepper


    Add the ruccola, tomatoes, scallions and walnuts in a bowl. Toss lightly. Add Olive Oil and Balsamic and spice with salt and pepper. Taste it and make sure you got enough dressing on the salad. Now add the bluecheese and try not to toss the salad much, it can easily turn into a smudgy looking salad with the bluecheese in there. Now place the salad on your plate. Finally, lay the Serrano ham on top of salad. I try and place around the salad, just because it looks pretty.. Haha.. I hope you enjoy this salad as much as I do. Let it be our 2014 Spring Salad!
