Want to make a healthy side dish but still crunchy and good? I am always trying to find the more healthier option for food so I decided to try making zucchini chips and that was a hit! So crunchy and flavorful and I they were done in a few minutes. A must try for you all that need some inspiration for healthy sides.Baked Healthy Zucchini Chips

INGREDIENTS
2 Zucchinis
Spices are optional, here are the ones I used
Paprika
Cayenne Pepper
Salt
Cumin
Parmesan Cheese (optional, don't use if your on a Paleo Diet)

Healthy Zucchini Chips

DIRECTIONS
1. Slice the zucchini with a cheese slicer, if you dont have one use a knife but make sure they are not to thick or thin to get the crispyness in the oven
2. Coat them with olive oil on both sides after placing them on a oven pan.
3. Use desired spices and sprinkle it on top of the chips.
4. Bake in oven for 10-15 min on 400 degrees. Keep watching them because they can go from perfect crispy to black in an instant because they are so thin.

Yesterday I had such a craving for fish; so I went to Costco and there they had wild caught fresh tuna. Yay! So I decided to make a ahi tuna salad. It is so quick and easy and tastes amazing! Wild caught tuna can be pricey, but all the other ingredients are cheap so all in all this is not an expensive dinner or lunch. If you are trying to eat healthy this is the perfect meal for you!

Lately I have been trying to cook more healthy, like staying away from dairy, sugar and wheat. So tonight I made a pasta dinner that tasted excellent and is so very healthy. I always figured that the gluten free and dairy free food was expensive and not very flavor full, but with this recipe it was neither. Okay, since all ingredients were organic it is a little more pricy than non-organic food. But the few extra dollars spent was well worth it to me, when you know that you are eating healthy and the food used is good for your body. This pasta dish is also made without any oils or butter and is low-sodium. In other words very healthy for you, and might I say delicious! Here is the recipe:
