Want to make a healthy side dish but still crunchy and good? I am always trying to find the more healthier option for food so I decided to try making zucchini chips and that was a hit! So crunchy and flavorful and I they were done in a few minutes. A must try for you all that need some inspiration for healthy sides.Baked Healthy Zucchini Chips

2 Zucchinis
Spices are optional, here are the ones I used
Cayenne Pepper
Parmesan Cheese (optional, don't use if your on a Paleo Diet)

Healthy Zucchini Chips

1. Slice the zucchini with a cheese slicer, if you dont have one use a knife but make sure they are not to thick or thin to get the crispyness in the oven
2. Coat them with olive oil on both sides after placing them on a oven pan.
3. Use desired spices and sprinkle it on top of the chips.
4. Bake in oven for 10-15 min on 400 degrees. Keep watching them because they can go from perfect crispy to black in an instant because they are so thin.


Yesterday I had such a craving for fish; so I went to Costco and there they had wild caught fresh tuna. Yay! So I decided to make a ahi tuna salad. It is so quick and easy and tastes amazing! Wild caught tuna can be pricey, but all the other ingredients are cheap so all in all this is not an expensive dinner or lunch. If you are trying to eat healthy this is the perfect meal for you!

Raw Ahi Tuna

Ahi Tuna, 2 Filets (sashimi grade)
1/2 Yellow Onion, chopped
2 Cloves of fresh Garlic
1/2 Cup Organic Soy Sauce or Tamari (Gluten Free & Organic Option)
Sriracha, to taste
1 tbs Sesame oil
1 tbs Rice Vinegar
2 tbs Fresh Ginger, chopped
2 Scallions, chopped
Black Sesame Seeds, to garnish
2 Small Carrots, chopped julienne style 1 Avocado, thin slices for garnish

Ahi Tuna in the Making

1. Rinse your tuna and pat them dry. Cut the tuna into cubes and remove all fatty and stingy parts.
2.Place your fish in a bowl with the chopped onion and garlic.
3. Get a small bowl and add sesame oil, Tamari, sriracha, rice vinegar, ginger and scallions. Mix it together. Taste it and if you are happy with it pour it over the fish. You can serve it immidiatly or put in fridge and let it marinate for a few hours.
4. When you are ready to serve, lay the carrots on the bottom, add the tuna and place the avocado on top. Lastly, garnish with sesame seeds and voila!



In this perfect summer weather the timing is perfect to share my Mojito recipe with you. At the moment I am in Norway on vacation and we are having some awesome weather here in May which might not always be the case in Norway. On our vacations we always have a few drinks, and mojito is a great one to enjoy on any summer day or any day really! Enough said this Mojito speaks for itself ;)

4 Oz Rum (light rum)
2 Oz Elderflower Liqueur (I love the taste of this liquere and it is perfect in this drink)
Mint Leaves
1/2 Lime
Brown Sugar
Club Soda

Great as a dip or topping for your tacos!
Who does not enjoy some homemade guacamole? It is the perfect appetizer for a party and a great topping for your dinner. This recipe is delicious and easy to make, so after work or for lunch its great to use your avocados on this healthy dish.


Three Ripe Avocados
1/3 Cup Chopped up Red Onion
2 Cloves Chopped up Garlic
1/4 Cup Chopped up Tomato
1 Tsp Chili-Garlic Sauce

Lately I have been trying to cook more healthy, like staying away from dairy, sugar and wheat. So tonight I made a pasta dinner that tasted excellent and is so very healthy. I always figured that the gluten free and dairy free food was expensive and not very flavor full, but with this recipe it was neither. Okay, since all ingredients were organic it is a little more pricy than non-organic food. But the few extra dollars spent was well worth it to me, when you know that you are eating healthy and the food used is good for your body. This pasta dish is also made without any oils or butter and is low-sodium. In other words very healthy for you, and might I say delicious! Here is the recipe:



1 Onion
2 Garlic boats
32 oz diced tomatoes
1/2 Lbs Organic Turkey Meat
1 Tbsp paprika
1 Tbsp Garlic powder
1 Tbsp Onion Powder
1 Tbsp Pepper
1/4 Tbsp Salt
1 Tsp Chilli Powder
1/2 Tbsp Orgeano
1/2 Tbsp Basil
Squeeze of half a lemon
16 oz Brown Rice Pasta
1 Cup Water

This is my husband and mine all-time favorite drink, it’s a classic drink that will never go out of style. It is a classic for a reason. Even though this drink is perfect just “classic”, but there are a lot of variations with this drink too. First there is a lot of different gin's like Bombay, Tanqueray, Beefeater or Hendricks, the list goes on and on and there are several different options to add a special flavor to your G&T. Of course a squeeze of lemon is always good. But a few of my other favorites is fresh squeezed orange, blood orange or fresh pomegranate juice. The options are endless, any fresh fruit or berries you add to this classic will make it like a new drink. Below is the recipe for the classic gin. The perfect treat on any day!

Spring 2014 my husband and I decided to try the Paleo diet of various reasons, clean our bodies, trying to stay away from alcohol and mostly just because I was curious I dragged my husband into this as well:) I must say that I have never felt so comfortable in my own body, I did not loose any weight, neither was that my goal, but I slept better, had more energy, no sugar cravings and the food is delicious. So I want to share one of my Paleo Muffin recipes because it is delicious. So delicious my husband did not even notice that they were "healthy" muffins! So if you have a husband or kids that needs some sweets, this is an awesome recipe, and it will definitely stop that sweet craving we all get!

Here it is!


Makes 12 medium cupcakes
1 Cup Almond Flour
1 Count Pumpkin Pure (18 oz)
1 Tbsp Coconut Oil, melted
4 Eggs
1/3 Cup Honey
1/2 Tsp Baking Soda
1/2 Tsp Baking Powder
1/4 Cup Shredded Coconut
1/4-1/2 Cup Coconut Milk

1/4 Tsp Salt
1/4 Tsp Cloves
1/2 Tsp Pumkin Spice
1/2 Tsp ground Nutmeg
1 Tsp Cinnamon

I think we can all feel that the spring is upon us, and therefore this Strawberry Jalapeno Cocktail will help you get that summer feeling. It's is packed with refreshing flavors like jalapeno and strawberries, mix them together in a drink for that spicy and sweet effect. I am in love. Please give it a try before you say no, and I believe that your answer will be "One more" after you try it! :) No in all seriousness, this refreshing cocktail with fresh fruit and a little hint of spice, is perfect for that summer party or in my vocabulary -- any summer day.

Here it is:


2 oz tequila/vodka
1 1/2 oz orange liquor
1 oz lime juice
1 Strawberry, chopped
1-3 slices of jalapeno(it depends on how spicy you want it)


Add the chopped strawberries and jalapeno slices to your shaker, muddle well until you can see the juices come out. When its all muddled, add tequila/vodka, orange liquor, limejuice and ice. Shake well. Then pore everything the glass of your choice, and get all the bits and pieces of the fruit with it.


Serrano Ruccola Bluecheese Salad -- Heavenly Delicious

It’s the middle of March and we can feel the spring coming, it’s the smell, the fresh crisp air and finally longer days. This salad is the perfect Spring salad, very easy and quick to make. It goes great as a side, but filling enough to be its own meal. I personally are in love with this salad, I basically had it every other day for a week now. Here it is:

For you Tequila lovers out there, I am one of you! The traditional Cadillac Margarita is so refreshing and perfect on any day. I have a few of drinks that I make at home and I would say that the classic margarita is on my top five drinks. Yum!

1 oz  simple syrup
1/2 oz lime juice
1 oz Cointreau
2 oz Tequila
lime slices for garnish
coarse salt to rim the glass

I started making this drink right after the pomegranates in our backyard started ripening, nothing is better than to freshen up your classic cocktails with some fresh fruit. I do making this drink with pomegranate juice if not in season - that does not stop me, this drink is delish!


1 oz Elderflower Liqueur
2 oz Vodka of your choice
1 oz Cranberry Juice
1 oz Pomegranat Juice Fresh or Storebought
1/2 lime

I first tried this drink when we had brunch at Fig & Olive in Newport Beach. If you prefer your drink refreshing but not to sweet you have to try this cocktail. I am so in love with this French style drink, rosemary syrup, gin and muddled blackberries topped off with fresh lime-juice. I want to go to France and order this drink! If you are not the biggest gin drinker --go ahead and mix in your choice of vodka.

HOW TO MAKE ROSEMARY FLAVORED SYRUP; 1 Cup Water, 1 Tbsp Sugar and Fresh Rosemary
Add sugar and water in a pan and simmer it on low heat while you keep stirring it. For every cup of syrup you want to make add 1 tbsp of sugar. Add a small branch of fresh rosemary and lower the heat, let the rosemary sit in the syrup for quite some while. Maybe after and hour the syrup will cool and have a hint of that rosemary flavor.


1/4 Cup Blackberries(you can use other berries too if you prefer)
4 oz Gin
1 oz Rosemary Syrup
1 Branch of Fresh Rosemary for Garnish
